CAO Formaggi - Cooperativa Allevatori Ovini is a cooperative made up of 700 members, founded in 1966 with the aim of enhancing the shepherd heritage of the Sardinian territory and join together the farmers, transforming the milk produced in the respective farms to produce an interesting range of cheeses

Origin: Italy - Sardinia

Raw Material: Pecorino produced in Sardinia with milk from Sarda sheeps collected only from the members of CAO cooperative

Taste: Delicate, with very original vegetal and floral notes that make it unique

Maturing: At least 9 months

Suggestions: Perfect in combination with a fruity and harmonious white wine, such as the Vigne Surrau Vermentino di Gallura, try it in a summer salad or as a cheese basket, paired with cherry tomatoes, radishes and chicory. Excellent also in with raspberries
