Produced by Cugusi dairy with pasteurized sheep’s milk obtained from property herd and from 4 local shepherds. The rind is red because it is treated with tomato sauce, a traditional Tuscan technique for transferring some acid taste to the pecorino cheeses

Taste: The taste is long, buttery and round. The aftertaste is round, slightly acid however dolce due to the butter of the milk
Maturing: At least 40 days
Suggestions: Perfect in pureness with a slice of sourdough bread. We suggest to serve it at room temperature
