Pecorino matured in fig leaves.
The maturation of pecorino cheeses refined by Vittorio Beltrami takes place in the ancient 'neviere' of Palace Rusticucci in Cartoceto, former Cardinal residence owned by Beltrami family. The 'neviere' are in fact two caves dug in tuff and clay which are accessed by a trap door, once filled with snow to cool the pantry.
